Sometimes, you just need comfort food that is guilt free and super healthy! This recipe is all you need. It is very reminiscent of lasagna as it has the perfect spicy tomato sauce and the tastiest filling inside the cabbage rolls. It’s a satisfying dish that is filling and full of amazing nutrients without feeling bloated from pasta!
We decided to add shiitake mushrooms to the filling to give it flavor and more texture when you cut into the cabbage rolls. We absolutely love to cook with mushrooms – they are packed with nutrients, but add a unique taste to the dish. If you are not a fan of shiitake mushrooms, you can use whatever type of mushrooms you prefer.
To make this dish even more comforting and festive, you can sprinkle some non-dairy shredded cheese on top of the cabbage rolls before you place them in the oven. We try to stick to whole foods when cooking, but everything in moderation… right? So if you are craving something cheesy, sprinkle away and enjoy! 🙂
