Time for a new school year to begin and that means dusting off the lunch boxes. Last year I vowed to pack more nutritious and fun lunches for the kids. I found that having a plan helped me stay on track and also is a great way to have the kids help pick out what they want to eat.

I try to make sure and pack lunches that my kids will enjoy but also will help power their little bodies through the long school day. Sometimes I find myself packing the same thing every day. That’s why I think meal prepping/planning is so important. Having a menu at the beginning of the week helps to bring the stress level down on me and the kids.

Snack

Since the days are long, our teachers ask us to pack a snack. One of my go-to snacks is Crispy Fruit from Crispy Green. Main Lunch

I typically try to pack something with a little protein for the main part of lunch. 

  • Sandwich – There are lots of options when it comes to a sandwich. One of my daughters prefers jelly the other likes turkey and cheese. Make them fun by using those cute sandwich cutters or deconstruct them on a long tooth pick.
  • Roll-ups – Another version of a sandwich just rolled in a tortilla or flat bread.
  • Lunch meat, cheese and crackers. My guys love pepperoni slices.
  • Bagel with cream cheese. 
  • Mini Waffles
  • Hummus

Lunch Sides

This is where I like to pack fruits and vegetables to get some nutrients in those little bodies. Crispy Fruit is a great option for an easy, nutritious side. I love that they come in individual bags so the fruit stays fresh.

Banana Roll-Ups

Banana roll-ups are super easy to assemble. I like rolling them up in the morning, putting in the refrigerator and slicing before packing lunch. With this lunch, I included carrots, pretzels and Crispy Fruit All Tangerine

  • Spread peanut butter or sunflower seed butter over tortilla.
  • Lay banana in the middle and roll. Wrap in plastic wrap and place in refrigerator for at least 30 minutes.
  • When ready to pack, slice with a knife. 

Sandwich Skewers

Sandwich skewers are a fun take on a classic sandwich. Using a long toothpick, thread on cheese and your favorite lunch meat. I will even cut up bread squares to include on the skewer.

English Muffin Pizza

This individual English muffin pizza make a fun lunch. Feel free to add your own personalized toppings. 

  • Start with an English muffin and top with 1 tablespoon of pizza sauce, sprinkle of cheese and your favorite topping. 
  • Place in the a 350 degree oven for about 5 minutes, or until cheese melts. 
  • Let cool before packing in lunch container.
