Change up your ordinary pasta salad with this Deli Style Pasta Salad! It’s perfect for potlucks, cookouts, or even to serve your family. With the addition of cheese and meat, it’s also hearty enough to have for a meal on a hot Summer night.

One of the things I love most about Pasta Salad is that you can add a few extra ingredients or load it up like we do! Pair it with cheese and crackers and you have a quick, veggie and protein packed dinner!

Over the years I have added lots of different ingredients to our Pasta Salad, but I always come back to this version with tomatoes, green peppers, broccoli, mushrooms, ham, pepperoni and cheese.

Often during the Summer when it’s hot and I just don’t feel like cooking a big meal, I whip up this Deli Style Pasta Salad for dinner.

For us the Summer means cookouts and picnics. This Pasta Salad is also perfect to pack in a picnic basket or cooler. I like using mason jars, they are easy to pack and easy to eat from – don’t forget the fork.

A delicious salad to serve as dinner, take to a potluck or on a picnic.

Ingredients
  • 1 box of rotini pasta, cooked according to the directions on the box
  • 1 small head of broccoli, cut into small pieces
  • 2 tomatoes
  • ½ large green pepper, chopped small
  • 8-10 mushrooms, sliced thinly
  • 1 block chunk Colby/Monterey blend, cut into bite size pieces
  • 25-30 pieces of pepperoni, cut into quarters
  • 4 slices of deli ham, cut into bite size pieces
  • 1 bottle Italian dressing
Instructions
  1. Cook pasta according to the directions on the box, rinse in cold water
  2. Chop all the veggies, meat and cheese
  3. Add to pasta
  4. Add the Italian Dressing {you will probably use the whole bottle, but use it in stages, adding a little at a time and let the salad rest}

This Pasta Salad is very versatile, you can add whatever extra ingredients you like. It’s also best if you make it the day before, to give the pasta some time to soak up the dressing.
